Scalloped Tomatoes and Artichoke Hearts
1 can whole plum tomatoes
1 can artichokes hearts
½ cup finely chopped onions
2 tsp. finely chopped shallots
¼ lb. butter
½ tsp. basil
2 tsp. sugar
Grated parmesan cheese, to taste
Salt and pepper, to taste
Directions: Grease a shallow casserole dish. Drain tomatoes and artichokes. Rinse and quarter artichokes. Sauté onions and shallots in butter until tender. Add tomatoes, artichokes, and basil. Heat, stirring frequently. Season with sugar, salt, and pepper. Transfer to casserole dish, sprinkle with parmesan cheese and bake at 325°F for 10 – 15 minutes until heated through.
1 large onion, grated or minced
1 cup sugar
½ cup red or white wine vinegar
2 tbsp. celery seed
1 tsp. salt
2 cups oil
Directions: Let the first two ingredients set for at least 2 hours, and then mix in remaining items and serve. Can be refrigerated for use later.
